Will there be any interruption in connectivity when this occurs? Also - any interruption when the configuration is committed?

commit new Alias and Zone is not disruptive, but the New commited Zone take no effect until you have not Enable the Config.
in some circumstance "Enable Config" is for short time Disruptive.

Could you expand on under what circumstances it would be disruptive?
What kind of disruption would occur? A milli-second outage perhaps? Or something more severe?

to explain here is a bit to long, i would suggest you have a look into a FOS Admin Guide and in FOS Command Reference Manual.
in few word, in example the command cfgenable is disruptive when QoS active Zone are present, TI is configured, or simple you want to remove and add Zone.
The goal to avoid non-disrptive is to have a Dual Fabric
