But, why is OAuth configuration documented beneath postbox configuration in techdocs?
I could not see how to configure options there.

Outgoing emails(SMTP) will always be configured via Options Manager Email.
Define a Mailbox is for incoming email.
To configure oAuth for Outgoing emails, Navigate to 'Administration Tab' -> 'Options Manager' -> 'Email' and click on mail_smtp_security_level. Change the option value to 5 and Save. A new Tab is shown at the bottom. Configure oAuth2.0 by following Set the Security Level as OAuth 2.0 - SMTP.

Under Define a Mailbox (broadcom.com) you can find a part for 'Set the Security as OAuth 2.0 - SMTP:
- Postbox for outgoing email?
- Postbox does not have email-type SMTP
