I have upgraded all of my ESXI hosts and vCenter from 5.0u1 to 5.1.0. When I create a new VM, the most recent virtual machine hardware version that I can select from is 8. What am I missing?

Looks like you are using the Windows vSphere Client!? To get all the new features you need to use the vSphere Web client.

If you create a VM in the legacy client then you can not select version 9 for the virtual hardware. However, after having created it you can select "Upgrade virtual hardware" from the VM's context ment to upgrade it to version 9.

In the new Web Client you can create new VMs with version 9 and do not need this workaround.

For VMware vCenter Server 5.1, virtual machines can only be created with hardware version 9 from the vSphere Web Client. However, you are able to upgrade to hardware version 9 using the vSphere Client.

Refer the VMware KB article http://kb.vmware.com/kb/2007240 for more details. Also, refer the below KB for more information on how to upgrade the hardware version of virtual machine.
