In general, it should be fine to carry out the upgrade over a span of two days. VMware officially states that running vCenters within an Enhanced Linked Mode group on different versions isn't supported, except when you're in the middle of an upgrade process. While I'm not aware of a strict time limit for this, two days sounds reasonable, especially since this is just a minor point upgrade, so major differences are unlikely.
One critical step you need to take before starting the upgrade (and this applies to your specific scenario as well as others) is to power off all vCenters in the Enhanced Linked Mode group simultaneously, create snapshots of each one, and then power them back on before beginning the upgrade. This ensures you have the ability to roll back all vCenters in the group to a consistent state if something goes wrong.
You can find this requirement detailed in the documentation here: https://knowledge.broadcom.com/external/article?legacyId=85662.

Subject: Upgrading vCenters in Enhanced Linked Mode
Hello,
I have 4 vCenters linked together, and I need to make update them from version 7.0 build O to build P-just a small version upgrade.
From what I did before, this process take around one hour for each vCenter, so if I try to do all 4 in same night, it would need more than 4 hours. But this time, I cannot spend so many hours in one session.
So I'm thinking maybe I update 2 vCenters one night and the other 2 in next night. Because this is only build version update, I want to know if is low risk to have the vCenters in different versions for one night.
Thanks a lot for any advice!
