Yes, you have to add the new physical uplink adapters to the vSwitch. You also have to check that the required network driver for this network card is installed on your esx hosts (different driver for different NIC vendors). I would recommend that you add the 10Gb NIC to the existing 1Gb NIC so you can test it. After changing the physical uplink adapter on your vSwitch, you can remove the 1Gb NIC if necessary/possible (onboard).
