    Folks,

I am newbie to vmware. I am running ESX Server 4 & Vcenter Server 4. When I go to create new server in my host I don't get the option to install Windows Server 2003 R2 SE? Why is this as the license that I bought for Windows is for R2. Could I possibly install standard version with different license than upgrade using correct license?

    Thanks.

You can just select standard. That option is mainly to the app knows which VMware Tools are needed when the OS is installed.

Am I not breaching licensing by doing that, should I upgrade to R2 once I am finished?

The option in vCenter has nothing to do with Microsoft licensing. You'll be fine to still install using your 2003 R2 install media and key with the standard option selected. It's really just so VMware automatically adjusts the guest settings which are most appropriate for your system.
