The best way to get a lot of this information is the compatibility matrix. https://interopmatrix.vmware.com/
For vCenter - seems to be 6.5U2 Product Interoperability Matrix (vmware.com)
As far as ESX for a vCenter upgrade, the matrix only goes back to 6.7.0 Product Interoperability Matrix (vmware.com)
I am not sure if there is a specification of the vDS version. I know if you are at least on 6.6.0 you should be good. It would at least match the oldest version of ESX that is compatible.

Subject: Minimum distributed vSwitch for vCenter 8.0U3
Hello,
I am trying to determine the minimum required version a distributed vSwitch must be running in order to upgrade vCenter to 8.0U3. I can't seem to find this information in the release notes or figure out how to search it in the compatibility matrix.
Also, what is the minimum version all ESXi hosts must be running in order to start the upgrade?
Could anyone point me in the right direction?
Thanks.
