The savings depend on the workload, and it's actually not only memory that can be saved.
Anyway, the savings are actually self-explaing. Think of physical systems. How many systems will use all installed memory, and max out their CPU(s)? I'd say none of them will. Most physical system will not even use half of the installed resources. That's where virtualization comes into play. It will give the VMs access to the physical resources as needed, and share physical resources among all VMs.
