Hello eoalves, think that you can create additional management ports in every esx/esxi in order to maitain the com with the vcenter, in your case, you can create a new one, and add this new ip to de vcenter, then you can try to move the vms with vmotion to other host and make some test with this host removing the old mngmt interface.

Thanks for your answer Diego. In a few days I will need to change all ips for my environment including vcenter, vsphere host and vmkernel ip.

Is there a procedure that show how to do it step by step?

    Regards,

    Evandro.

VMware has a KB article dedicated to your question in ESX:

    http://kb.vmware.com/kb/4309499

Or if you are on ESX 4.0 Update 2, you can use this:

    http://kb.vmware.com/kb/1022078

If you're running ESXi version 4.X, you can simply connect to the console and use the DCUI (Press F2 to customize the system) and set the management IP from there.
