I have 3 hosts and i want to be sure we have enough redundancy 

How should I calculate it?

If your workload needs two hosts and you have three hosts in cluster, you have enough resources for one host failure.

Calculate failover capacity is depends to many factors such as your failover needed.

You can use this formula typically:

(No. Hosts for Workload Requirements) + 1 -> N+1

If you want to cover more than 1 x host failure, then consider about have more failover host.
