I just received a reply from one of our colleagues. They had similar problems with Dell R750 and VMWare ESXi, but with a lower patch version. What Dell recommended is to roll back the iDRAC version from 7.20.xx to 7.10.xx, which should solve the problem. Indeed, this seems to be a Dell issue only.
Since I will not be in the office until next week, I will have to test this and see how it goes. I will provide feedback here.

Hi,
There is a possibility that I have found some bugs in the latest patch.
I have patched my ESXi 8 Enterprise via vCenter 8.0.3 Standard from version 8.0.3.24414501 to 8.0.3.24585383. The patch completed without any issues.
What I noticed was that right after rebooting our Dell servers (XR12, R750 and R740xd), the fans started spinning at maximum. After some time, it drops to normal speed of about 4200 rpm, and again after a minute, it increases speed to max... This happens all the time and the only recourse I had was to override this behavior in iDRAC via the command:
racadm set system.thermalsettings.FanSpeedOffset Low
and
racadm racreset
It seems that the new patch is either doing some shenanigans via ipmi or I don't know..., but I noticed that it started after patching the ESXi.
I do not see any errors or problems in the logs...
Does anyone else have the same problem?
