I apologize if this has been asked before, but does anyone know if it's possible to connect 2 ESXi hosts with a LAN cable to increase local speeds?

    A crossover cable? Yes.

Although that's basically possible, it may or may not work as expected, depending on your network design.

To find out about that, please provide some information about how the network configuration (subnets, vSwitches, port groups, vmnics) look like, and what exactly you want to achieve.

We have 4 ports on each server. Right now server 1 has all 4 ports going to the same switch, and server 2 has 3 going to the same switch and 1 going to a private network. That one port has its NIC assigned to its own port group, and then on both servers, the 3/4 ports are each in their own group together with NIC teaming enabled. I'm hoping I can make a direct connection between the 2 VM servers for faster LAN speeds.

If you have switch ports for the cables anyway, not sure I see the point. I'd potentially do this in a home lab or small deployment where every single switch port mattered.
