Michael, 192.168.100.2 is not an IP assigned to vmnic3, it is an IP that vmnic3 see in the network. It was made to help you and see which network is seen from this particular NIC.
So it's ok to see 192.168.100.2 here.
You can not assign any IP to vmnic3, this is just a physical interface used to access network, so you need to configure some interface (vmkernel or just a VM) on virtual switch connected to vmnic3 and assign this interface IP 192.168.100.4
