We typically don't recommend less then three nodes in your primary site. Secondary sites can have a single node, or, if you would like to be able to promote a secondary site as primary in a failover scenario, then three nodes may be more appropriate there.
A three node primary site can generally service hundreds, or even thousands of users depending upon how they use the system.
There is a lot of flexibility, some small customers can get by with a single node primary with a single node secondary site for fault tolerance; others run dozens of nodes across several sites, in multiple independent clusters. So it is very hard to know what to suggest until there is a better understanding of your environment and your risk tolerance.
Which items to order depends largely on whether you need FIPS 140-2 level 2, compliance, and if you want to install a physical appliance, VMWare Virtual Appliance, AWS AMI, or Azure VM.
