 VM Advanced-Setting's missing

Hello all,

I have an odd one I think. I inherited an environment that has been upgraded from 5.x to the latest 7.0.3 (we shall not go into the patching process they were using before). I have a mix of VM's from throughout the years. I have started to secure the environment and have run into an odd issue. I am missing some of the Advanced-Settings on many of the VM's. I will use this setting as an example.

isolation.tools.copy.disable

System A - Missing

Compatibility - ESXi 6.0 and later (VM version 11)

System B - Present

Compatibility - ESXi 5.5 and later (VM version 10)

The hardware compatibility is the only thing I can think of that would make these differences but as you can see, the older one is the correct one. (I do have it on my list to do a hardware compatibility upgrade at some point) The documents I'm reading say it's okay to add these settings, but this is a production environment with no real test environment so I'm hesistant to just push the button and make changes. 

There are approx 17 settings that are missing on the VM's. Most seem beign like the above setting. My question is, why are these setting missing and is it okay to just add them? What is exposing these settings and why the mismatch? Any help would be appreciative, thank you.
