I read in few documents it helps in mass movement of data operations ....includes KB Article: 1021976
Data Mover recognizes a “VAAI compliant” array and then hardware offloads that block operation to the array
Does that mean in every operation(Read/Write) between ESX host & Storage ....Data mover plays a key role ..OR is it specific to any operations?
With a VAAI compliant array ..does my ESX host CPU perform much better ?

the ESX datamover(s) are involved in ALL IO that goes on via an ESX host.  So, if the DMs becomes more efficient (e.g. you have an array that supports VAAI) then yes, you will see reduced CPU utilization for operations that can use the enhanced datamover.

Maybe http://www.yellow-bricks.com/2011/02/18/blocksize-impact/ helps understanding the different datamovers.
