No Sure what happened during QuickStart. Please share the screenshots.
However adding hosts to cluster and expand the DiskGroup is straight forward process
Configure vSAN vmkernel Port as other three Nodes
Introduce new hosts in vSAN cluster
Configure Disk Management (Claim unused disks) of both the Nodes (Cache/Capacity Disks)
I would suggest to evacuate hosts from cluster (full data migration) and re-add.

Sound like you might have a cluster partition e.g. the 3 original nodes and the 2 new ones cannot communicate with each other - check Skyline Health as step 1. here.
