Hello azuser,
"Is there any issue with managing a vSAN 7 cluster using vCenter 8?"
This is completely fine - a higher version vCenter can manage lower version ESXi/vSAN hosts without issues.
The only thing extra you will have to do is upgrade the license applied to the vSAN cluster to a version 8.x license - as vSAN is licensed on the cluster-level and the cluster entity belongs to vCenter, this will revert to Evaluation license following vCenter upgrade and require vSAN 8.x license applied to it (https://knowledge.broadcom.com/external/article?legacyId=80691), steps to upgrade licenses here https://knowledge.broadcom.com/external/article?articleId=281797 . -------------------------------------------

Subject: vSAN 7 and vCenter 8
We have a 2-node vSAN 7 cluster that is currently managed by vCenter 7. I am planning to upgrade vCenter to version 8, which means the vSAN 7 cluster will be managed by vCenter 8.
Is there any issue with managing a vSAN 7 cluster using vCenter 8?
Eventually, I plan to upgrade the vSAN as well, but that might take a couple of months.
