Are you running a Wayland or Xorg(X11) session when you log into your VM? What you see can be a result of running "Ubuntu on Xorg" as the session type when logging in to the Ubuntu VM, and having 3D acceleration turned on. There evidently are some bugs in 3D support on Xorg(X11) in LInux (not just on Ubuntu - I've seen this on other distros). Not sure if this is a VMware issue or some other issue buried in Linux such as the kernel, Xorg, or Mesa 3D libraries.
To fix this, either
- Disable 3D acceleration for the VM, or
- Make sure Wayland is enabled within the VM, and use the default session type "Ubuntu" when logging in. You can then turn on 3D acceleration for the VM.

What Mac model, Fusion version, Ubuntu version and Linux kernel version in the VM?
There are known issues with certain Linux kernel versions and buggy Mesa3D libraries in Linux.

I don't know if it is just my machine or not. I found that, as long as I enable OpenGL on the display, the Ubuntu Desktop UI doesn't refresh in time, it paints mosaic pixels and updates the screen slowly. I can't work with it at all.
