I hadn't - mainly as I feared royally screwing up the VM. Thankfully though that seems to have fixed it!!
Thanks so much - all working now.

There have been reports of issues when upgrading VMware Tools in VMs that were built with the Tech Previews. Have you tried an uninstall of VMware Tools (using the remove option wizard you used to install them) then reinstalling the tools?

What is the guest OS (with version, please), macOS host version, Mac model, and the version of VMware Tools installed in the guest?

Not sure when this started, but having recently updated from the tech preview to the release version, I notice my clipboard is no longer shared between Fusion and MacOS. I've looked everywhere for any setting that controls this, but can't see anything.
- VMWare Tools is up to date
- VM has been restarted multiple times
- Key Mappings is enabled in settings
- Accessibility is enabled in MacOS for Fusion
