We just do image level backups. I don't think you can do an incremental for image level.

VCB is a image level backup and file level backup, and it's can be incremental. You may mount .vmdk by using vcbmount to copy the file you needed when do file level backup but if i'm not mistaken only for windows os. VCB only backup proxy.

try to refer to this url : http://www.petri.co.il/frequently-asked-questions-about-vmware-esx-vcb-faq.htm

    Correct me if i;m wrong.

You can do incremental on file level backups but not the full image backups. For the file level you can only do Windows OS and it mounts the VMDK on the proxy and removes it when the backup is finished. When you do a full image backup the vdmk is copied to the proxy and then it can be deleted after the backup. Dave Convery had a great document on VCB, http://communities.vmware.com/docs/DOC-11485
