I am trying to assist a customer with providing either learning material or a lab they can use to bring newer tech up to par. Does such a lab still exist and if so where?

There is no preinstalled lab, but Converter is straightforward to install - just an installshield wizard with a few clicks.The User Guide is a reasonable learning material. Its first 3 chapters (around 30 pages) give a good overview (the rest of the guide are instructions how to perform specific operations).
Sounds like you have an idea for a new project.
But is it just one use case? Might be faster to just do over the shoulder training.
