When the setting is at "Default", how strong is it? You can manually set the sensitivity but where does the default land on that scale of 1 to 100 and does it log by default or terminate/quarantine?

    Sensitivity is 20 by default
and the default action it takes is LOG

The default is pretty low..you can increase it as per your requirement there is no such recommendation for it just one thing is recommended

Increase in sensitivity = increase in False Positive

however other than remote apps like VNC i am not aware of any false positives..
    However you can test it..

Would it cause any problems going higher? Why is the default so low?

Weird...I didn't see the rest of your reply until my screen refreshed....or just edited the response while I was making my first reply!!

Either way, thanks! That's exactly what I was looking for.

Set it to about 50% and watch it for a couple weeks.

Also set the log setting to quarantine.  What good is the trojan or key logger detector if it's only going to tell you about it, not do anything about it...
