     Hello

    I have recently migrate on Exchange Server 2010 under Windows Server 2008 R2.
    I have Symantec EndPoint 11 RU5 with SEPM.

    What are the best practices to installing SEP on a Windows 2008 R2 with Exchange Server 2010 ?

     Look at Microsoft's site for EXACTLY what is needed.  Symantec plays catch up to what Microsoft publishes.  At the time of RU5, it wasnt out then, so Symantec couldnt do the auto exclusions like they can for Exch2003/2007.  

    Once you figure out what MS recommends, you can use the above links to create exclusions.
