Hello,  Would it be possible to have the real deployment times of each step?  I mean that the time counter stops when the step is not in the status "Running"

Are you asking if there's a way to forcefully stop the clock if a step is not in the running state?  If so, there isn't presently a way to do that that I'm aware of, but it might be worth submitting an idea to request such a feature be added in the future:
