Collaboration call requested regarding using CA PPM OOB

We're at the start of a project to re-launch CA PPM from a highly configured on-premise instance to an out-of-box SaaS.  Our PMs and RMs are concerned that processes supporting OOB usage will be too simple and will not work.  Seeking to find a medium to large organization that use CA PPM OOB or with very minimal configuration to share their experience with our company.

Customers generally buy CA ppm for it's flexibility for configuration, if you don't need that then there are better SAAS solutions.  (Cheaper TCO too) 

Just trying to be honest, tough to balance the temptation to go crazy with custom features and config vs ease of supportability
