Flat File Kettle transformation question

Hi,

We are looking to use the Flat File connector and we would like to have a better understanding on how to use the Kettle transformation field, as highlighted in red below:

I would imagine the concept should be something like this, but we do not know what the actual Kettle file would look like:

If anyone could shed some light on this matter, that would be very much appreciated.
