The VMware backup API is what you want here, best and easiest way is to use a backup application to do this.
you could try something like veeam that will integrate with vCenter or direct to host and can snap the VM and write backup to local file or a network share etc. or restore direct to another host.
there is new capability in vSAN ESA with snapshots and backups as well, just depends on your environment.
If you provide some more details of what you have I could have been more specific.

I am looking for a way to create Snap Shots, download them, then copy off the Host to another storage area.... automatically or via some script.
Any ideas? Is there an out-of-box product that can do this?
Can these Snap Shots be used to restore a crash or infection in the future? I realize they are a "moment in time"
