Is there a way to suspend a VM and keep the VM RAM in, well, RAM ? I don't want to offload memory to disk.

When you run the "suspend" command on your VM, it freezes the system almost like a sleep in Windows, the current memory / system state is preserved and stored. A .vmsd is created which represents the memory state associated with a VM, this is just a file that'll be read back in when you resume a VM, but this does not store it in your physical memory. It's stored on the local vmfs volume of where the VM is located it.
