In my all flash vsan, I see I have 32GB as space VM OVERRESERVED but I do not have any policy with a kind of space reservation so how this overreserved space is allocated ?

    I made some tests:

In an empty barand new cluster I've deployed 2 VM withe the default policy. They are powered off and the VM OVERRESERVED is 0

I've powerd on just one VM That has 4GB RAM assigned

Now the VM OVERRESERVED is 8 GB and in the used capacity breackdown I see swap object is 8 GB that is correct because we have 2 copy of the VM objects

But the VM OVERRESERVED includes the swap space? Is this correct?

This might be a good test.  Enable sparse swap space http://cormachogan.com/2016/02/22/vsan-6-2-part-5-new-sparse-vm-swap-object/

If you do and the VM OVERRESERVED is then 0, I would say it's safe to assume that VM Swap is included.  Thank you, Zach.

I've tested it: enabling sparse swap space, every VM has just few MB as VM OVERRESERVED, so we can assume that the VM SWAP is included in that counter.
