Do I need local DNS servers to do GSLB using the ServerIron?

...or is it OK to use remote DNS server (they are of course reachable from the SIs point of view)?

It does not really matter. You can use local or remote DNS servers. Local DNS servers do have the advantage that it is easier to control them. Remote DNS servers are possible but it is harder to control them and you need to use source-NAT in most of the cases to ensure the traffic flow is wokring (to get the traffic back to the ServerIron to translate and change it).
