WE have a Centralized Scanning Exception for a folder listed similar to the following:

    %[WINDOWS]%\HBGDDNA\*

This is for exclusing the folder. WIll this work with the '\*' at the end as well?

Even if you don't put \* it will exclude everything inside HBGDDNA

SEP does not allow Wildcard, check the below articles

Title: 'Which variables and wildcards does Endpoint Protection allow in Centralized Exception Policies?'

What then will happen since it has the '\*' in it, and, whatever that action will be, is it documented anywhere?

It is documented that wildcards are not allowed - I am not sure if here already is an idea to introduce such a feature - if not, you can submit one :-) What will happen I am not sure - I have no access to SEPM now but or the exception will not be created or will not work properly.
