I would like to know if there is one way of create a notification rule to send a notification if there isn´t activity in the ticket on some status, and after 72 hours pass automatic to other status

I think you might be able to do this with Service Type Events or via a ITPAM process.

It's easy to do using Service Type events like said Brian_Mathato, you need to add a macro and write the status on Text.
