But a button to force manually a step would be nice.

I believe there one of the two options below might help achieve the goal you've described.
1. Resume action. While an action is failed/paused you have the capability to access that process and resume the process. If the action fails again then you can (whether you should or not is a different topic/conversation) select the option to "Select failed actions to pass manually". This will continue executing the remaining actions in that process/step. The main caveat to be mindful of is whether or not the action you selected to "pass manually" was used to capture an output variable. If so, and that output variable is used in subsequent actions, then those other actions may hang because the output variable/parameter will likely be null. There may be other caveat's. But this one is the one that comes to mind.

During a deployment, is there a way to bypass a step, or force it to state Done/Complete ?
The goal is to force start the next step.
