Yes the logs are flat files sored in the X area of the log directory. All you need to do is restore the log files from backup from a particular time and they can be read.
These however, may not automatically appear in the 'job runs' on univiewer if these are purged after 7 days. This is set in the maintenance files in node settings so this can be changed if you wish to a longer time period.
You could check things like job run history or job events in the Activity Logging section of the monitoring tab on Univiewer to give you an idea of what ran when and the action taken.
Also use the 'universe' command to translate the numerical name of a log into a more human readable Uproc or session name
